Something Good!

You've probably noticed 2 posts, both without the option to comment.  The reason, I'm still in the process of working on the function keys, within my blog, under the new format.

On to the good stuff! I had a quart of over ripe strawberries, and needed to do something with them. I started searching strawberry cake recipes on the internet, and came across a Martha Stewart Recipe, for not a "typical" strawberry cake, and had to try it.  The cake turned out really good.  Bulldog Man gave it 4 it had to be pretty good for the rating.  Here's the recipe, thank you Martha Stewart.

Strawberry Cake
6 tablespoons unsalted butter, softened, plus more for pie plate
1 1/2 teaspoons baking powder
1 cup plus 2 tablespoons sugar
1/2 cup milk
1 pound strawberries, hulled and halved
1 1/2 cups all-purpose flower
1/2 teaspoon salt
1 large egg
1 teaspoon vanilla extract

Preheat oven to 350 degrees. Butter a 10 inch pie plate.  Sift flour, baking powder, and salt together in medium bowl.

Put butter and 1 cup sugar in the bowl of an electric mixer fitted with the paddle attachment.  Mix on medium-high speed until pale and fluffy, abut 3 minutes.  Reduce speed to medium-low, mix in egg, milk, and vanilla.

Reduce speed to low, gradually mix in flour mixture.  Transfer batter to buttered pie plate.  Arrange strawberries on top of batter, cut sides down and as close together as possible.  Sprinkle remaining 2 tablespoons sugar over berries.

Bake cake 10 minutes.  Reduce oven temperature to 325 degrees. Bake until cake is golden brown and firm to the touch, about 1 hour.  Let cool in pie plate on wire rack.  Cut into wedges, and serve.

  1. As Papa Pea would say, "Looks good enough to eat!" Yum!

    1. Mama Pea,

      It was!!! :-)
Hugs, and Love to you and Papa Pea.

  2. And as Dan would say, "that looks marketable!" LOL. I've never made a strawberry cake, but now I believe I just might.

    1. Leigh,

Very Marketable!! I never made strawberry cake either. I've done white cake with strawberries, and cream before.

  3. That looks delicious! And you can tell it was a hit by the fact that not much is left!

    1. Susan,

      It was :-)
Didn't take long for it to totally disappear.
Hugs, and Love To You and Your Furbies.
