Chiles???


Did you say Hatch Green Chiles?

No……oh, I did!!!

Bulldog Man and I came home from New Mexico with 2 large burlap bags full of mild green chiles.  When we arrived home, I opened each burlap bag, got rid of the over ripe, and broken chiles.  I pulled out approximately 4 bags of 80 chiles to give to friends who love green chiles, and I kept the rest for us.

 
 

I thoroughly washed each pepper, cut of the top of each pepper, pulled out the seeds, and placed the peppers in a food saver bag sealed for freezing.  Doing this gives us the opportunity to take out a package, or multiple packages, of peppers and roast them at our convenience, instead of having to roast all of them at once.
 
 
 
I didn’t throw away the seeds; I set them on a cookie sheet, and allowed them to dry.  Once dried, I will pack them away for planting in the future.

 



You can have your chiles roasted at the store when you purchase them.

While there roasting the entire area smells wonderful.

  2. Dumb woman here: what do they taste like? Is it just the HEAT? You have so many, so you must use them for a lot of things. My Food Saver started melting the plastic today so I got a new one at Walmart. Lucky for me, it's a small one instead of those giant ones they're now producing. AND AND AND, they have improved the seal. It's LARGER and more efficient. I'm a happy camper.

      You're not a dumb woman. It's hard to describe the Hatch Green Chile. You can get them really hot or mild. I prefer the mild. Have you tasted roasted regular green peppers? If so did you like them? Well green Chiles are so much better.

      I love my Food Saver Machine. They can be very expensive. I found mine on the internet right after black Friday, on cyber Monday. It was $70.00, originally $140.00.

      The offer this in the NM southern basin. All stores selling green Chiles do this for free down there.

      I can't send you the fresh Chiles because I don't think they would be any good when you got them. But I can send you the exact same ones already roasted in a can to try. There also from Hatch, there the best.

      Keep you eye's on the look out for a package.

    5. OMG!!! REALLY? I trust you. I know I can sit on the sidewalk and have something to show the mailman!!

      That site you sent me to was one I was reading earlier and trying to get up my courage to CAN or PRESERVE. I just fear killing someone by my lack of knowledge. I AM going to start with a simple jam this week. See if Stud dies from botulism, then move up to black-belt canning.

      Go to youtube and type in canning jam. Ball has step by step video on canning things. I just checked out the Ball video on canning tomatoes whole and it was very informative.

  5. Wow that's enough chili peppers to last me a life time. Then again I have the most White Boy taste in spices you ever met. I could live on nothing but salt for the most part :)

      These Chiles go fast in my house. My husband even though he was born in Wyoming, his family moved to El Paso and they lived mostly on Mexican food. Hubby introduced me to green Chiles, and now I love them and put them on all kinds of things, lol......
      I can't eat the real hot ones, they kill me.
      The mild ones are my favorite. I have the White Girl taste in spices too, lol.....

  6. OH MY, we LOVE hatch chiles. I posted last summer about buying them and putting them up (with our foodsaver, don't you love that thing?). Anyway, I roasted them all first, then peeled, then, sliced, then sealed. It was a lot of work.

    I NEVER thought of doing them like this. So when you thaw them later in the year, they roast up easily?

      We clean them, cap them, and seed them. Then we place about 10 in a bag and food saver them. Then place in freezer. We take them out as we need them and then roast them. It makes the process much easier and it saves my fingers, lol....

    2. That's just great, I'm going to try it. We still have some roasted frozen ones but are getting low so I will buy some more and try this and just roast as needed. Stores down here are all full of Hatch goodness. Thanks!!

      When I get that can of chilis, I'll take photos for my blog. WHAT should I do with them first? Enchilada? I'm thinking putting some in scrambled eggs.

      Chiles.....Chiles....Chiles, YUM.....

      I put them in just about everything. My favorite food item.....Enchiladas. Try them with fried potatoes, or mac and cheese. I could keep going with listing food items.

      Chiles are a bad habit for me...........gotta thank Bulldog Man for introducing them to me when we met years ago.

      You can get them from mild up to extreme heat.

      Our family prefers mild. I'm getting old and when your older heat doesn't seem to like my body, lol.....

  9. Those are some pretty chili's! I just love Hatch chili's but never seem to find them. Pretty cool that they'll roast them for you. I bet the smell was amazing!

      They are amazing, I love the smell when there being roasted. The taste is just awesome.
      I know you've been canning all kinds of stuff. When I come over on Saturday, I will bring you some Hatch Green Chile powder. This way you don't have to can them :-)

  10. I love chile and I love Hatch. But I go for our local Pueblo chile, as I believe it is even better. If it isn't available then I get the New Mexico, Hatch. I love the hot. Growing up eating chile, I can tolerate a lot of hot and love the wonderful flavor. The farmers here in Colorado, also offer free roasting. It is awesome, you only have to rinse it off and it is peeled! I usually go that route since it is so fast and easy to pack and freeze. I puul of the stems and put them into the bag whole. Love the seeds and insides. This is how all my family and generations have always done it. Hispanic background and love to eat it in pork green chile or just with diced tomatoes and garlic and salt and olive oil. I have roasted at home, in the oven and out on the grill. Love, love the smell! I put up about three bushel a year! In September, Pueblo will hold a Chile and Frijole Festival! It is like a combination Farmers Market, carnival, parade, and historical Indian dances, etc. Lots of fun!
    Your chile looks really pretty and you will surely be enjoying a lot of wonderful meals! I like your stream lined method. But I am a creature of habit. Gonna roast and peel and bag it all, at once.
    Can I tell a tip here? Before handling the chiles, coat your hands in olive oil, vegetable oil, or shortening. Then wash with Dawn dish soap when finished.
    So happy you got to bring these home with you! Yumm!

      I love putting away green Chiles for meals throughout the year. I was being a little lazy, usually we roast them first. But this time, I had other things to do and I didn't want to waste the Chiles.

      Great tip!! They say to do the same thing with your hands before cutting up red beets.
      This time, I used surgical gloves to protect my hands. The last time I cut up Chiles I didn't put a thing on my hands, talk about learning the hard way, lol

  12. Love them! But we don't get them here often! Sometimes a local store will bring a shipment in and you have to be early because they sell out fast! I love the smell of roasted chilies!
