What to do with the over abundance of lettuce? Harvest it, make salads after salads. Time for a brief change, let’s talk juice. Yes, you heard right, I said juice! Have you ever juiced lettuce? It actually tastes really good. Bulldog Man and I harvested three big bowls of romaine, bibb, mesculin, leaf and arugula. Washed the lettuce thoroughly and then spun the water off with a lettuce spinner. Washed 2 apples and disposed of the seeds. Peeled several cucumbers and a small piece of ginger. Ran all the lettuce, apples, cucumbers and ginger through the juicer and wa….la…..you have green delicious juice. Occasionally, we juice as a meal, especially if it’s hot out or we just don’t feel like a meal.

My favorite is juicing a couple of carrots and adding 1 apple and a handful of fresh parsley, OMG…..talk about being in heaven!!!!
I've eaten so much lettuce lately I've turned green. Juice might just hit the spot instead. Great idea.

ReplyDeleteWe haven't even got any lettuce YET ;( still eating winter cabbage salads. I used to juice carrots .. hubby is not so 'into' liquid veggie juice (YET:)

Deleteit's a great way to use up the lettuce when you are sick of salads! oh and i love the asian lettuce wraps! i can't wait to start getting some lettuce - it's gonna be yummy! i like to just go out into the garden and graze!

Kymber, Yes, it is a great way to use up the lettuce. I'm like you I love to graze when in the garden. I need to graze on veggies more and lose some weight, lol.
