Potato Soup and Oatmeal Bread (Good Stuff)


I was in a hurry, and not sure what to make for lunch before Bulldog Man came home for lunch.  I decided to make potato soup with the last 4 potatoes I had left in the cabinet.  I cleaned the potatoes, chopped them up and placed the potatoes in a pot of chicken broth.  Then I added 4 cups of water, 1 carrot, 1 celery stock, ¼ of chopped onion, pepper, and salt (to taste).  After all the vegetables were cooked, I added 1 can of evaporated milk.  Stirred well and brought the temperature of the burner down to simmer until ready to serve.  For toppings on top of the soup, I fried up bacon and pulled out the shredded mild cheddar.  There you have it folks, potato soup (yes, I know I forgot the chives as a topper).  Not really, lol…..I just didn’t have chives in the house.
If you like a thick broth use cornstarch or flour to thicken

      Country Living in the Ozarks posted this recipe and I had to try it. The boys ate the entire loaf immediately. I'm making more bread and plan on freezing it.

  4. This is my daughters all time favorite meal. I make a mean gluten free oatmeal bread, but haven't been able to make a broccoli soup without the flour. It is either too gloppy with the gluten free stuff or too runny. Ever thought about evaporated milk.

    1. The soups was out of this world good!!! I thickened it with some flour (not much). Some days, I just like soup that is not thickened. I guess it's how you feel and what you feel like at the time, lol
