EGGS

A friend of mine, Sarah Roe from Money Saving Queen, published today on her website an article on “Frugal Living, How to Freeze Eggs.”  So I decided to follow her instructions and freeze my extra eggs.
If you’re like me, you have plenty of eggs on hand to use for cooking or baking.  You may have your own egg producing chickens or you buy plenty of eggs at the local grocer when on sale. I will generally have anywhere from 1 dozen to 4 dozen in my refrigerator at any one time. I don’t find myself using the eggs up as fast as I should.  To prevent the eggs from going bad, I will take a dozen eggs or so, crack them in a large measuring cup, mix them up with a whisk quickly and poor the egg mixture into ice cube trays to freeze for future use.  After the eggs freeze in the ice cube tray, take each egg cube out and place them into a sealed container in the freezer for storage.  This allows your egg to be stored for approximately a year. I feel freezing the eggs is more beneficial and safe for my family. 




Another process is to coat each egg with a warm mineral oil (this is supposed to be like the natural membrane when a chicken lay’s the egg) and replace the egg back into the egg crate, small side down and store in a cool dry place.  This will allow your eggs to have a shelf life of 9 – 12 months and not require refrigeration.  I believe this process was noted within the Doomsday Preppers Program on National Geographic Channel.  This process, I’m not comfortable using.  The only cool place I have would potentially attract critters or bugs and I’m not planning on inviting these problems.

We attempted to work in the garden today and the winds in Oklahoma are terrible, 45 mph, making it impossible to complete tasks out in the garden.  You would start something and have it blown away before you can secure it.  Time to go inside and work, forget working outside in the garden, there’s always tomorrow.

Thank You, Prayers, Critters and Food

I would first like to start my Monday post by saying thank you to everyone who sent me get well wishes and prayers.  As you know, I had oral surgery on Thursday morning.  Initially, I wasn’t feeling any pain of course because I was heavily sedated.  I was okay, and figured I could go on and complete some of my everyday tasks.  Yes, I’m a knuckle head!!!!  Instructions, from my doctor, no lifting or heavy work for approximately 4 – 5 days.  Did I listen; no………did I listen after, when the pain and bleeding started, yes.   I had no choice but to listen, I ended up over doing it.  Under doctor’s advice and Bulldog man’s persistence, I took several days and absolutely did nothing strenuous.
I’m not totally healed but I sure feel so much better.  So, I’m back and eager to post to my blog.
On a serious note, my family, immediate and blogger would like to extend our deepest sympathies and prayers to all families affected by the extreme weather in Alabama, Georgia, Kentucky, Indiana, Missouri and Tennessee.
Our daughter came into town from Dallas yesterday to complete some business up in Oklahoma City on Monday (today).  My adventures today started with babysitting our daughter’s dog, Oscar.  I recorded a little video footage of the cute little rascal.


Here’s footage of Beans and Oscar playing tug of war with one of Bean’s toys.  Gotta love their determination!



I whipped up crock pot chicken and dumplings (the lazy way) with vegetables for dinner tonight.  4 chicken breasts, 1 can cream mushroom soup, 1 can cream of chicken soup, 2 cans of chicken broth, 2 carrots (chopped), 1 celery stock (diced), ½ onion, ½ teaspoon salt, ½ teaspoon pepper, ¼ teaspoon cumin and Best Choice Texas style biscuits. Slow cook all ingredients except biscuits for approximately 4 – 5 hours on high.  Pull meat out of crock pot and cut, place back in crock pot.  Once the meat has totally cooked, take your biscuits and cut them in strips, drop them in crock pot and cook another 60-90 minutes on low (if the broth needs thickening use cornstarch and little water, mix and pour into crock pot).  Once the broth is thick, serve and enjoy (my picture was leftovers, almost all dumplings are gone - can you say we all were hungry).

Short And Sweet

My post today is going to be short and sweet today.  Life has got in my way (had some surgery) and need a few days to recoup.  I will be back in a day or so with new posts.  Earlier today, I tried to read several blogs and make entries.  Now I need to take care of myself, catch ya’ll soon.
